One of the things that I have been thinking about with agricultural density is that it isn't only a function of how efficient farming is
It doesn't take into account the ammount of food per arce directly. If you average it on a full country level it can make a bunch of sense though.

If tech increases the amount of food you can get from the same land then it becomes more intensive. So, the number of farmers in the population might be able to decrease and feed everyone. Or excess capacity might be able to be exported. But, that doesn't directly effect the agricultural density. Something could become more efficient and actually increase the density.

It is a great metric for get an idea of how mechanizaed farming is. Since that mainly reduces labor rather than increase what you get from the land.

Another thing is whether you count all the land that theoretically could be farmed. Or if you count all the fertile/useful land used for either farming or is not actively used.

You could also get a situation where there is a farmer shortage to a degree. So they use methods that use less labor but more land for the same amount of food?
You might even have unused land that is being used as a park or suburban lawns. Or if transportation infrastructure is less developed areas that aren't being farmed because it isn't economical to do so.
