Chocolate Covered Banana Bites
This recipe is gluten free.

Ingredients:
1/2 cup Guittard Semi Sweet Chocolate Chips
2 bananas, just ripe
1/2 cup raw almonds, toasted, chopped

Directions:
Melt chocolate in a bowl in the microwave for 40 seconds on high. Stir and then place back in the microwave for 20 second increments until the chocolate is completely melted and smooth.

Slice the bananas into "coins". If you are using almonds as a topping, toast them on the stove in a dry pan over medium heat. Stir them frequently until they become toasted. Let them cool 5 minutes and then place them in a ziploc type back and pound them with a meat tenderizer into the desired size.

Dip a coin of banana into the chocolate and coat using a couple of forks. Place the the covered banana onto a parchment paper covered baking sheet.

Press almonds on top of the slice. Once all the bananas are covered in chocolate, place the pan in the freezer to firm up. Once the bananas are frozen you can place them a ziploc bag or a tight fitting container for storage in the freezer.

These make a fantastic dessert and a delicious healthy snack that satisfy's any chocolate craving!

also, to those that dont have chocolate, you can use coconut oil. Just melt it and mix a lot of cocoa powder, i use no sugar with it, but you can add sugar to make it sweeter. Once you freeze it, its so good as well

Every time I try this, the chocolate cools quickly and becomes too thick. I've tried heating it more, but then it starts to cook and thicken more. Any advice to get it thinner?

This looks delicious, Robin! Thank you for the idea! I have Hershey's chocolate syrup and another kind of ice cream chocolate syrup that hardens upon contact with frozen things. I am going to do an experiment now to see which one might work (freezing the banana first with the ice cream chocolate). If neither works, I will get the Guittard chips tomorrow. Also have a variety of nuts to try. :)
