Don’t listen to the 10 minute knead. Just knead it until your arms fall off. Agree with people on here, knead a lot and aggressively! You may have to do longer than 10 minutes or until the dough is tough

My seitan was always a chewy disaster until someone bought me the Avant Garde Vegan cookbook and I started cutting the gluten flour with chickpea flour. Really helped with the texture. Yeast extract (vegemite or marmite) also gives a nice deep "beefy" flavour. You've got to flavour the mixture heavily or it comes out bland. I still struggle with that. I do find it a hassle tbh, but it freezes pretty well so you can make in bulk.

I really want to see you ace this challenge! Why not try again and split your dough into 3 and knead to different times just to really figure out what is best 😅

It's so wild to me how much it looks like meat. I tried one of Gaz's seitan recipes to impress some non-vegan family at Christmas and they were blown away, it was so real! Kneading the dough develops more gluten strands which is what makes it tougher, so knead ALOT and aggressively!

Try steaming the seitan instead boiling it, works for me :)

Although I make decent seitan now, I do still get inconsistent results, presumably due to kneading more/less, different cooking times etc.. I never make it as a centerpiece for a meal. I make chunks to add to stews or stir frys, so I'm never relying on it turning out a certain way. I don't love it enough to have it be the main show on the plate.

I think you’re right about the kneading, I think I’m strong for a girl but I always have to knead anything for like 3 times the stated time, it should get smooth and bouncy I think! Kneading times are for men and like if you’re from the 1940s and made bread every day so your kneading muscles are well trained....
Or use the dough hook on a mixer!

Connie’s Rawsome Kitchen has a lot of seitan versions to try. She’s also one of the best cheesemakers on youtube.

I've been making a lot of Seitan recently, not so much as "steaks", but in a roll form so I can chop or even grate for different recipes. I use 2 cups vital wheat, 1 cup chickpea flour (besan), 0.5 cup nutritional yeast. Then for the wet very similar to what you have used; perhaps even BBQ flavours. Knead, knead and more kneading. Then I form it into a roll shape and wrap it in tin (aluminum) foil before steaming for one hour; turning over half way through. Has come out firm and tasty every single time 💯

Thank the gods there is someone else out there who is scared to work with seitan and doesn't always get it perfect. I always laugh at your facial expressions! You're the best!

vegemite might be a possible findable substitute for marmite.

5:06 I tried and actually was happy with the result! The recipe I definitely recommend is chickwheat by Avocados and ales - it makes amazing chicken-like shreds. And another recipe my non-vegan fam loves is the seitan lentil meatballs by Sam from It doesn't taste like Chicken - an amazing recipe for tomato/roasted red pepper sauce and pasta!

I made the corned beef seitan from Connie's Rawsome Kitchen and it turned out great. The secret for me is having a mixer with a dough hook attachment. I just set the timer and go do something else for 10 minutes!
