Duck IS pretty much dark meat chicken... but better. Mid duck is still juicier, richer, and more flavorful than really good chicken thigh. Breast meat only people won't like it, but it's definitely worth a try for anyone else!

As an enthusiast, I can tell you your evaluation of duck as "Instagram chicken" is misguided. Duck is not "fancy chicken, " it's a fusion of all the best qualities of chicken, pork and beef. It has the tenderness and form factor of chicken, but with the richness and body of pork and some of the deeper "red-meat" flavors of beef. It is the uber-meat, and it demands your respect.
