Great explanation! So basically everything comes down to 2 formulas:
1. Primary voltage/Secondary voltage = Primary turns/Secondary turns (or V1/V2 = N1/N2)

2. Primary current/Secondary current = Secondary turns/Primary turns (or I1/I2 = N2/N1)
And from these you can extrapolate whatever you need (you can also deduce that V1/V2 = I2/I1).

Now what we need to know additionally is how many turns of which gauge conductor to wind up for say 220 VAC around a nucleus of say 6 square cms. for a continuous current of say 2 amps. This calculation knowhow in turn should also help us determine those same variables to complete the parameters for the other winding, say primary or secondary.

I suppose the non formal way we can say, it transforms current to voltage which makes sense with conservation of energy.

I have a puzzle. Almost 90% of LEDs use a maximum voltage of 3.2v. I want to connect 20LEDS which is a total of 64v. I know I will need resistors along the way. I have collected many adaptors but they range from input 120v to output 18v or less. Also many LEDs are use 20mA. How can I convert one of the adaptors from 120v input to get approx 64v output. 10 LEDs would use 32v. What would suggest to create a flexible output voltage depending on the number of LEDs I use.

Can't we use a small number of turns on a coil for stepping up and down? Instead of 100 to 200 - 1 to 2? 1 to 3?

All voltage and current are possible with transformers why we need extra electronics.

Just a question... why using 100 turns on the primary and 200 on the secondary if I could just use 1 turn on primary and 2 on the secondary?
