That "hand-touching" to determine doneness is ridiculous! Everybody's hands are totally different ! Thus, just use a thermometer for core temperature!

The dry/wet aging process is a crock o' bull&@!$ ! If you prepare a fresh cut of beef properly, there is no comparison in flavor & health benefits. Aged meat is "survival food" not cuisine 😂😂😂
