I think it made sense for Manny to become an overprotective dad to Peaches. The guy lost his first wife and kid to hunters. So it fits that when he's given a second chance at being a dad, he'd probably go a little far with keeping them safe. Sure, the overprotective dad trope can be annoying, but it's understandable.

Manny going from a stoic loner to a dorky, yet protective father is some of the best character development I've seen in any cartoon/movie series. Shows that he would have been a great father for his original family too.
