This fennel salad is very simple. It is made with salad greens, orange slices and fennel. We are then going to make an easy orange vinaigrette to dress it and voila you are done!

1 medium fennel bulb – halved and sliced
1 medium sweet orange – segmented and chopped
4 to 5 cups salad greens
Avocado slices

FOR THE DRESSING:
¼ cup of fresh orange juice
½ tsp. orange zest
1 TBS honey or agave
2 TBS balsamic vinegar
¼ cup olive oil

Mix the salad greens, chopped orange and fennel in a large bowl.

In another bowl, whisk together the orange juice with the zest, honey and balsamic vinegar. Add the olive oil in a slow stream as you whisk constantly.

Add the dressing to the salad and toss well. Serve with avocado slices.

I made this & your broc. cheese soup for dinner tonight. We all loved both & will be making them again & again. I did add red onion to the salad. TY, Chef for great healthy, clean & affordable recipes! God bless u & urs.

Fennel does not show up in the markets till September. I might have to visit you because it looks so delicious with all those individual layers of taste, crunch and yummy.

Is maple syrup (instead of honey/agave) going to ruin this recipe? I've got maple syrup. Never tried agave nectar.

If you change the orange vinaigrette to Mandarin Napoleon Cognac ... then you will really have a dynamic taste sensation.  Napoleon's original recipe Sicilian oranges (now made with Dutch orange liquer), Napoleon Courvosier Cognac, with underlying swarming spices.  Drinking it is a woman killer.  You don't need much for the vinaigrette, but it is thick and sweet that dilutes on the salad, and aerosolize the grape cognac for a superb taste.
