For best results use fresh salmon from the Pacific Northwest. If fresh salmon isn't available canned salmon will work just fine.

Those corn tortillas need a little color otherwise they're bland but everything else !looks tasty. I know this is from quite a few years ago because most every grocery store stocks panko now. A terrific Japanese invention....there's no crunch like it.

I’d love to know what species of salmon that is and if it’s wild caught. It’s beautiful! Here in Seattle we have a variety to choose from for example Sockeye, King and Chinook. What is that piece please?
