So I was taught the same way and what I came up with helps alot better. Do what you did but leave the filet attached by those wide ribs by the head flip the fish with that first filet still on and it makes it alot easier to cut the second filet because the fish isn't bent in from the other half missing.

Those are the best tasting fish I ever ate. Back in the day there were a couple of illegal crews gill netting them in the S.F. Bay. They were selling for 14$ a pound in chinatown. Good money until the coasties sawed one of their fast bass boats in two with a 20 mm.

Gotta clean all that red meat away from the fillet and skin. Will eliminate the fishy flavor it causes. Cleaned thousands of them and you’ll enjoy the taste so much better
