Thanks! I love catfish, but always thought the muddy taste came from the yellowish strip on the back area. Can’t wait to go out and catch some this season.

Best recipe: Nail the catfish to a 2x4. Cover with salt, pepper and seasoned salt. Marinate the whole thing in barbeque sauce. Cook at 400 degrees for 2 hours. Throw away the catfish and eat the 2x4.

That yellow meat is okay? You do the same on bullheads? I thought one of the catfish had a mud vein in it?

"Red Meat" in fish is an acidic part of many fish, some have a lot more than others making it where you might want to
soak the meat in milk or other marinade. Have you seen how a flathead is cleaned? Especially on the larger fish there
is two big pieces of meant on their head & then the stomach meat is larger than the side fillets. The best eating cats
are 2lb-7lb fish but everyone thinks differently about this.... lol, I mean I don't mess w/ carp or gar but I've eaten both
of these cooked by cajun folks & I mean to tell you it was good. Gar Balls is scrapped off the backbone of the Garfish
& rolled up into balls. I do like how you handled these catfish, good explanation & well done video as well. peace

My grandad used to skin catfish with a pair of pliers. Thats the only way I've ever seen it done. I definitely want to try this method.

Great video - I think you've taught a bunch of us old dogs a new trick or two, here. I tried your method and it produced such clean fillets family members commented on it, unprompted. I think at this stage of life it's better for me to focus on getting clean fillets rather than every ounce of meat off the fish. Especially when it's a game of chance if you'll be the one to get a 'gamey' piece! Only gonna do it this way going forward. One question though -- had a hard time with the fins -- what exactly are you using to clip them, particular scissors or wire cutter or both?

I wish I had this video many years ago when I cut a catfish for the first and only time. I did not know what I was doing. I tried to scan it first before cutting the meat, and that was the hardest thing to do skinning a catfish.

I am definitely thinking about purchasing this filet knife, but I did not know filet knives could be so expensive! I have a filet knife, but I only paid a fraction of the cost for this one. But maybe I will have to invest in a quality knife when start fishing on a regular basis. But I hope I can use a cheap knife sharpener, because the same brand sharpener is just as expensive as the knife!

I was just curious on how catfish are cleaned. Never expecting to get a tip on board maintenance. I have a squigee kicking around so I'm going to try that when cleaning pike
