This vinegar coleslaw recipe is a refreshing twist to classic slaw with mayonnaise dressing.

Here, thin slices of crisp cabbage are combined with a tangy, bold, light olive oil, mustard, and vinegar dressing.

No-mayo coleslaw is excellent for barbecues, picnics, and potlucks. It’s easy to make ahead and can be served as a tasty side dish.

⭐️ Ingredients
5 cups (1 pound) (450 grams) red cabbage shredded. Sub green cabbage or mix half half.
2 carrots shredded
1 large green apple thinly sliced
⅓ cup (40 grams) walnuts chopped

DRESSING
¼ cup (55 grams) extra virgin olive oil
3 tablespoons (45 grams) apple cider vinegar
2 tablespoons (30 grams) mustard
1 tablespoon (15 grams) maple syrup or honey
1 teaspoon salt
2 twists black pepper

I made this salad to eat before sandwiches. The salad was so good and refreshing. I couldn't stop eating it till I ate the whole bowl. I thought carrots and apples are golden balance because my mom used to make juice with the two ingredients, but I couldn't think of adding cabbage. How creative you are! maple syrup and extra virgin olive oil give moisture to the salad while apple cider vinegar makes perfect harmony with the apples. This really is the chefs share and treat! You will never know how the taste turns out until you tried it by yourself. Thank you again for giving me the joy of life!

This looks good. However, I would prep everything else first except the apples, then cut the apples last just before tossing to reduce enzymatic browning. The Opal apple is one variety that resists browning

Yummy! In winter, instead of maple syrup, add brown sugar, 2-3 Tblsp butter, and apple cider vinegar. Bake with lid in a casserole dish 45 minutes... along with the rest of your dinner. Nice warm veggies.
