We need to talk about goat cheese.

Cheeses made with goat's milk have long been favoured by cheese lovers all around the world. In fact, there are some regions in France such as Provence where it is the predominant type of cheese.

If you've never tasted cheese made with goat's milk before, prepare yourself for quite a treat. With its unique aroma and flavour, goat cheese is very different to cow's and sheep's milk cheeses.

But, what does goat cheese actually taste like?

Well, there is no short answer to this question. Because it would be like asking, “what does cow’s milk cheese taste like?” or “what does red wine taste like?”.

There is an incredible range of cheeses that can be made with goat’s milk and, to be honest, they all taste quite different.

Depending on the breed of goat, the geographical location, the culture used and the maturation method, the type of goat cheese you end up with will have completely different characteristics.

As a matter of fact, the reason for the signature taste of most goat cheeses are 2 fatty acids that are present in the milk, caproic acid and caprylic acid.

In this video, we will guide you through tasting notes for all types of goat's milk cheeses.

Fresh chèvre.

Young soft cheeses with a rind such as Sainte Maure de Touraine (log shape), Valençay (like a pyramid) and Rocamadour (in a round).

One month old semi-soft goat cheeses such as Mothais Sur Feuille and Chevrotin.

Matured hard cheeses such as Tomme de Chèvre (minimum 7 weeks), Garrotxa (up to 6 months) and L’Amuse Brabander (24 months).

The goat's milk cheese flavours certainly took me some time to get used to but once I did I was very keen to try the different types of goat's milk cheeses out there. What’s your favourite type?

Recently tried a couple. One fresh rolled in ash, gooey, salty, creamy very moreish. Then - my new favorite - Goat Gouda! This is complex and hits the spot nicely! Nutty, citrusy, mushroom, creamy and crispy calcium crystals to boot! Highly recommend!

As someone who loves roast duck I sometimes come across duck's butt meat, it has a pongy fart tast/smell which makes me gag. Chicken butt has the same but much milder.
Goat cheese is on the level with duck's butt to me if not stronger. Like tasting solid farts that goes up your nose from inside your mouth. I stay clear of it.
I've known people to love that duck butt taste though, I'm guessing they would love goat cheese and vice versa.
