Profiteroles, also known as cream puffs, are a delightful French pastry that can elevate any dessert table. Let’s start by preparing the cream puffs, you can prepare them the night before and keep them covered with a tea towel.
To fill the cream puffs we used custard, but whipped cream either fresh with added sugar or pre-sweetened vegetable is also excellent.
We start by cutting the butter into pieces. In a small saucepan melt it with ‘water sugar and pinch of salt bring everything to a boil over low heat.
When it starts to boil remove from the heat add the flour all at once, return to the heat stirring until the mixture pulls away from the sides.
Add eggs a little at a time and mix with an electric beater until well incorporated into the mixture.
Put all the mixture into a pastry bag with a large round nozzle and form into balls on top of a baking sheet lined with baking paper and Bake at 220 degrees, preheated oven for 15 minutes lower 190 degrees for another 10 minutes. Do not open the oven or they will deflate.

As soon as the cream puffs are ready you will need to fill them with custard or whipped cream. Place the cream in a pastry syringe and go to fill the cream puffs, generously.

Prepare the glaze: In a small saucepan heat some water and melt the chopped chocolate in a separate bowl while keeping stirring let it all melt it should turn out creamy. Turn off the flame and incorporate the cream while stirring. Take the cream puffs one by one and dip it in the glaze then place them on a serving plate forming a tower. If you have whipped cream decorate with clumps.
