Brine Mix
4 cloves garlic minced
1c Sea Salt
1 1/2c Sugar
1/2c Cranberries, dried
1/4c Orange slices, dried and chopped
1/4c Apple slices, dried and chopped
1Tbs Rosemary
1Tbs Thyme
2Tbs Pepper corns
1/2in snip Vanilla Bean, finely chopped
2Tbs Allspice
4 Bay Leaves

Mix all ingredients in a bowl. Pour into large mason jar or air tight container.
Makes enough brine for 15-20lbs of poultry or meat. Can be used on chicken, duck, turkey, beef, moose, caribou, bear, rabbit, or squirrel.

In Part 2 of 2, Michelle takes the reins and cans the Caribou after is has been brining for 24 hrs. So sit back and enjoy the show as we stock our pantry.

Great video. I love your blue and white decor over your sink. Very nice. Do you find that some of your canned foods that are canned with fresh garlic has a tendency to taste a bit bitter? I have noticed this when I can some foods.
