▶Ingredients for 48 sables
210g unsalted butter
Pinch of salt
100g powdered sugar
2 egg yolks
400g flour
Granulated sugar
*Divide the dough into 4 pieces equally (about 187g each)

▶Add the following ingredients
・Matcha green tea
5g matcha powder
10g powdered sugar

・Chocolate
8g cocoa powder
25g milk chocolate chips

・Vanilla
Vanilla extract
1 tsp flour

・Black tea
3.6g black tea - 2 tea packets

➢Method
Add salt and powdered sugar to the softened unsalted butter and mix with a rubber spatula.
Add egg yolk and mix it, and then add flour.
Bring the dough together and divide it into 4 pieces.
Add each flavour to each dough.
Place the dough in the refrigerator after wrapping it for at least 3 hours.
Put granulated sugar around the dough.
Cut the dough into 12 pieces.
Place them on a baking tray and bake at 165°C for 20 minutes.

Love this recipe so much! Baked it 4 times already since November. Today I used the leftover eggwhite to roll the dough in before sanding it in brown sugar, turned out very tasty (just looks a bit rougher than the plain white sugar version of your recipe).
I appreciate the precise mesurements, thank you for this wonderful recipe!

This is the only recipe I’ve tried that got me the crispy butter cookie texture I was looking for! I was previously struggling with my butter cookies being too soft and cakey. This one was perfect!

I did reduce the flour by a bit on my second try because the matcha flavour dough was not very cohesive anymore after incorporating all the powder. Black sesame, hojicha and coffee are other flavours I’ve also tried with this base recipe. Thank you emojoie!!

Any chance you might someday make the thin, rectangular, flakey, almond flour (sometimes sesame'd) Taiwanese tea biscuits? They can get a bit tricky, as they require making pastry dough, and I'd love to see your take!
