Raspberry Cheesecake bar

These baked raspberry cheesecake bars are so fun and easy to make

If you don’t like raspberry then you can keep these cheesecake bars plain / add lemon zest / add orange zest / add strawberry

Baked Cheesecake bar recipe
5-6 bars
•113g Cream Cheese ( room temperature)
•3g Cornstarch
•27g Sour Cream
•100g Condensed milk ( room temperature)
•4g Lemon juice
•1/2tsp Vanilla extract
•15g Granulated Sugar
•2 tsp Raspberry powder ( dry raspberries in powder form / freeze dried)

Chocolate Coating Recipe
•200g Dark Chocolate 55% or Semi Sweet Chocolate
•35g Neutral Oil

Method:-
•Preheat oven to 300f or 150 C
•In a bowl mix cream cheese with an electric whisk or paddle attachment until it is soft. Next add condensed milk, sugar, vanilla, lemon juice, mix it all using electric whisk. Then add raspberry powder, sour cream mixed with corn starch & mix it all using electric whisk.
•Fill the heatproof Popsicle mold with cheesecake batter and bake for 10-12 minutes.
Let it cool completely at room temperature for 2 hours and then in fridge for 5-6 hours
•Remove cheesecake from mold and dip in chocolate coating. Lay these bars on a tray lined with baking paper and allow the chocolate to set completely. Garnish the bars and enjoy!
