These lemon raspberry cheesecake bars are absolutely delightful! They're rich & creamy and have the most delicious raspberry swirl!

I also recommend using metal binder clips to help keep your parchment paper in place. It makes life so much easier!!

Recently made these and turned out so yummy! You can really taste the lemon and raspberry in it and I love that it’s not overly sweet. The crust is simple, but balances out everything perfectly. The raspberry swirl didn’t turn out as dark and colorful, wonder what kinda raspberries you used. I ate four pieces the same day I made them. Lol Addicting!

This looks so good! I’ve been baking cheesecake bars with a raspberry jam swirl for years but haven’t thought of adding lemon to that. Excellent tip! 😍😍😋😋

Thanks for the recipe! I can totally veganize this! Just use vegan butter (earth balance) and tofutti cream cheese! No need for eggs either as I make cheesecake all the time. Just use a a few table spoons of flour.. it helps to bind it. You should totally team up with Gretchens vegan bakery! She makes the best vegan deserts on earth!
