If you're looking for a fresh start without deleting this world, you could steal WadZees idea (with credit of course) and when 1.20 drops, you could travel 10s of thousands of blocks through the nether to totally new areas to load in only 1.20 terrain, then set some goals for yourself before you been return. He locked all his stuff in an obsidian box including armor and totems and had to literally start from nothing in his same world.

Side note, but if you're looking for something new to do you could totally do what Wadzee did and just. travel out super far in the next update and leave all ur stuff behind to start totally fresh in the same world. He went back to his stuff but you of course don't even have to! Like a whole new world but in the same world.
