Belachan as it is called in Indonesia and Malaysia. Common throughout countries of South East Asia . Every restaurant serving local food will have their own version. Normally in South East Asian restaurants, Sambal Chilli Belachan is served in a small bowl with a slice of lime as a relish. It has multiple layers of taste enhancing derived from dried shrimp paste, chilli and herbs. It genuinely makes your mouth water.

Recipe :-

Ingredients :
Dried chillies - 20 gms cut and soaked in warm water for 30 mins.
Fresh red chillies - 100 gms , deseeded and sliced
Lemon grass - 3 stalks sliced
Pandan leaves ( screwpine leaves )- 5 washed and tied
Ginger - 10 gms chopped
Shallots - 100 gms
Garlic - 50 gms
Dried shrimp paste / belachan (block- available in south east asian markets ) - 1 tbsp dry roasted and powdered
Gula melaka (palm sugar ) - 1/2 tbsp
Dried shrimp - 1 handful soaked and crushed
Tamarind - 1 tbsp pulp (1/2 cup water extract )
Turmeric powder - 1/2 tsp
Curry leaves
Oil - 1/2 cup
Salt to taste
Lemon Juice - 1tbsp (optional )

Methodology :-

Grind shallots, ginger, garlic, fresh red chillies, lemon grass, curry leaves, soaked and drained dried chillies, belachan , gula melaka to a smooth paste.
Heat the oil and add in the dried prawns , pandan leaves and curry leaves. Stir until aroma is released.
Add in the turmeric powder.
Then add in the ground paste, and stir .
Tamarind juice is added in . Keep stirring and cover to simmer for 20 mins.
Wait until oil is floating.
Last add in the lemon juice ( optional ) and salt to taste.
Add in extra oil 1 tbsp before removing .
Cool and store in a container and refrigerate it .
Best eaten with Curry Laksa, Singapore Mee-hoon, Mee Goreng and Fish cutlets as well.

Can be eaten with all types of rice as well including Curd Rice.
