The recipe I learned personally is even easier
Just slice chili and tomato, just add salt and dried shrimp paste, and grind by mortar and pestle.

Ngl the recipe that my mother told me was 12 chillis, a tiny spoon of salt, 2 garlics and a lil bit of hot oil thats all

As an Indonesian that can't live without sambal, this recipe is too complicated.
You don't need much to be honest.

Just shrimp paste, chili (the hotter version is better), garlic, chalots, some tomatoes and some sugar if you like it sweeter. That's it!

You just blits everything together and actually you don't need to cook the entire thing. Just make sure the ingredients are clean. If you're clean freak or not sure and need the sambal to last much longer then you should cook them.

That's a complicated sambal... I just need salt, chili, shallot, and shrimp paste to make it more simple

No tomato? I honestly doubt it would be that color without tomato. Also, I would never use lemongrass to grind up with everything. It won’t breakdown. Use it whole while frying the Sambal for flavor.

It's too much of ingredients, also it's more like balado sambal paste that I usually make for spicy tofu, spicy fish, spicy chicken or spicy chicken feet. Sambal (Indonesian sambal) usually just using chilli, tomato, garlic and shallot and that's it
