Creamy Ube Halaya
Ingredients:
1 kilo Ube (boiled and grated)
2 cans Cond. Milk
2 cans Evap. Milk
1 to 2 c Sugar (or according to sweetness desire)
1 tbsp Vanilla Extract
1/4 c Butter
Cooking Time: 30 to 40 mins over low heat
Procedures:
1. In a bowl, place in grated boiled Ube (Purple Yam)
2. Pour in 2 cans of Evaporated Milk, 1 can Condensed Milk and Sugar, then mix until sugar dissloves
3. Then add in Vanilla Extract and lightly stir
4. The. Using a Blender (for creamy texture) blend the mixture with 1 can of Condensed Milk, then set aside.
5. In a wide pan, over low heat add in Butter and let melt.
6. Then pour in Ube (Puple Yam) mixture, stir until it cooks for about 30 to 40 minutes.
**stirring occasionally to avoid sticking from the pan, over low heat
