Paragraph 3, the use of 'work produced at home', can you please enlighten me on the form of the word 'produced' there? is it an adjective?

I have something to ask. I am referring to the third paragraph. In the first sentence there, you use ‘an employee’ and the next sentence you use the pronoun ‘they’. Can you explain on that because i thought that i would use he/she there since it refers to a singular subject before that.
