Love the video, the production and Calpernia, the facial expressions added to the overall feel of this and entertained greatly.
Most of all, I LOVE this weighted siphon machine, I've fancied one of the standard siphon machines for a while but this is something else.

Same as mason jar canning principle. Water turns to gas/vapor and exits the boiler chamber (or mason jar). As that chamber cools, it contracts, and in this case, sucks the liquid back in. With a mason jar it would suck the lid popper down and seal it shut.
