Instead of destroying the plastic that covers the jars, when opening the case, cut around the box just above the box on 3 sides. When storing the jars, whether empty or full, cove back over with the plastic. It helps keep them clean & free of dust.

As a long time canner i want to suggest that u take off the peels wen pressure canning...the skins tend to get gritty and come off the taters anyway...just my personal preference but it doesnt hurt anything but the texture wen cooking yhem to eat after jarring...

Dry canning is not the approved method and very risky. Please just add hot water to your jars. It doesn’t cost extra to do it safely.

Do you need to leave the skin on? I have a ton of potatoes, and I want to can them. I never have before.

Not an approved method. Dry canning does not raise the temperature high enough for long enough to kill any pathogens on the food.

Aren’t you suppose to add water or broth? How will they cooked without any liquid?

I always put water in mine when I pressure can my potatoes to each their own I guess
