Sweetgreen Harvest Salad Dupe Recipe:
Ingredients
1 chicken breast
1 medium sweet potato, diced
2 tsp. olive oil
2 cups kale, destemmed and sliced into ribbons
½ cup wild rice, cooked
½ honey crisp apple, diced
3 oz. goat cheese, crumbled
¼ cup almonds, slivered
2 tbsp. basil leaves, chiffonade
1 tsp. salt
balsamic vinaigrette, as needed
black pepper, as needed
Instructions
Add 1 tsp. salt and 1 tsp. freshly ground black pepper to the chicken breast. Air Fry at 400°F / 205°C for 14-15 Minutes, or until cooked through and golden brown. Let cool for 5 minutes then dice. Set aside.
Toss the sweet potato with the olive oil then Air Fry at 400°F / 205°C for 7-8 Minutes, or until golden brown. Set aside.
Add all ingredients, including the chicken and sweet potato, to a large mixing bowl and toss to combine with the dressing. Serve and enjoy!
