Sweet Potato Muffins / No Sugar No Butter / Easy to Make

These Sweet Potato Muffins are made without added sugar or butter! This muffin recipe is a good choice for people who like healthy snacks and sweet treats. It's very easy to make at home!
Sweet Potato Muffins
(6 servings)
Ingredients:
3 pieces (300g) steamed sweet potatoes
2 Tbsp (30g) vegetable oil
2 eggs
1+1/3 cups (200g) all-purpose flour
1/4 tsp (2g) salt
1 tsp (4g) baking powder (Aluminum-Free)
1/2 tsp (2g) baking soda
1 tsp (2g) ground cinnamon
optional:
2 Tbsp (15g) chopped /sliced almonds
1/4 cup (45g) raisins
(350F/180C) Bake 25 -30 minutes
Method:
1. Preheat oven to 350F/180C
2. In a large bowl, mash steamed sweet potatoes. Then add oil, eggs and stir together.
3. In a separate bowl, mix the flour, salt, baking powder, baking soda, ground cinnamon together.
4. Add the flour mixture to the sweet potato mixture and gently stir together. Stir until just combined.
5. Grease a 6-cup muffin pan.
6. Divide the muffin batter evenly among the muffin cups.
7. Sprinkle the chopped/sliced almonds on top, then sprinkle some raisins.
8. Transfer to the preheated oven, (350F/180C), bake for 25-30 minutes; or until risen and golden brown.
9. Remove the muffins from the oven and place them on a cooling rack.
10. Let cool slightly and serve.
Notes:
* Since sweet potatoes and raisins are very sweet, I didn't use any sugar in this recipe. If you like a sweeter flavor, you may add some sugar in it.
* I topped muffins with sliced almonds and raisins, but you feel free to use chocolate chips, dry cranberries, or walnuts, etc.
