Aw, this makes me want to cry. My lola used to make pancit canton for breakfast when I was still going to elementary school. She'd make it because she knew it was my favorite. Now I'm in college, shes long since passed, and I'm laying in bed thinking back to how happy I was as a child.

PanPan! A college student's staple. It stands for Pancit and Pandesal, but I guess it can also mean Pan bread (dunno about others but we do sometimes call the loaf bread a pan).

When I was little I did something similar but with Maggi ( Indian instant noodles ) and is also absolutely amazing 🤩

My father used to do this! He might still - not sure, since we've been no contact for three years or so - but it definitely stands out, still. He'd always toast the bread and add in a bit of butter, the seasoning pack, then onions, pepper, salt, lettuce, sausage, and tomato. It was one of his favorite combos to do when we were doing things like hiking, off roading, or he was going somewhere remote like a lake or out of the way river, or Arthur's pass to see the snow. An all day, out of the house, expending energy kind of deal that was comfortably heavy but kind of warm after the noodles had been in a thermos for a few hours in hot water. Was out and about a lot and had circulation issues from raynauds, so it was a regular occurrence. This takes me back to some genuinely good times, honestly. Don't have a lot of them, with him, but really loved when it was an active day.

Calamansi Canton with Pan de Sal and Royal soda (also served when you're sick, same with Gatorade) was my go to snack when I was a kid
