Why blues players use THIS note over the V chord

This is why you often hear blues players add THIS specific note to the usual minor pentatonic, when playing over the V chord.

It's just a very sweet note for this chord, and that's because it's part of the chord itself - it's a chord tone; it's part of the V chord triad.

BB King did it, SRV did it, Clapton does it, Hendrix did it - everyone and their dog does it, and now you know why.

The quick answer: the note is the 2nd/9th of the root, when you play the V chord. Another way to look at it: it's the 5th interval of the V chord. In this case, the V chord is B7 so that note is F#. The 2/9 of E is F#.

Would it also be fair to say that this lick over the 5 is part of some major pentatonic scale? I feel like I've heard a lot of guys jump between major and minor cadences in the blues.
