So my mum and i were really excited to make this dish and we cut up all the vegetables and put everything in the blender. We plug in the blender and mix it together. All went well. We tried it and it tasted AMAZING. So then i go to move the blender but our blender has a turbo button. The lid was off and then i go to grab. BAM i touch the turbo button by accident and half the sauce went ALL over the kitchen. I had to remake half the sauce. It took us 2 hours instead 5 minutes.

3 cloves garlic
Small piece ginger
2 red chiles
2 tins coconut milk (sub: 1 tin and ¼ cup water)
1 tbsp maple syrup
2 tbsp curry powder
Pinch black pepper
Piece of beet root (will make it turn red)
-Blend it all—


4 scallions
Tofu
Tamari
Red pepper/stir fry veggies
Cilantro
1 lime

Pasta of choice

Ugh that looks so good! It reminds me of a red soup that I tried from a vegan cooking book. It had tons of curry and spices and the base was red lentils and beets.

I would have chucked in some kaffir lime leaves and lemon grass and maybe some peanuts to garnish, make it a bit more Thai.
Looks nice but I'm not sure its really a Thai curry, quick coconut & beetroot noodles still looks tasty though!
