Authentic pesto - 6 ingredients (Real Italian recipe!)

Pesto is one of my favourite sauces for my pasta: today I will show you how to make an authentic pesto using the real Italian recipe, 6 ingredients in a pestle and mortar.
I have a lot of basil in my garden so I thought it was the perfect opportunity to make pesto. I like short pasta to go with my pesto sauce: trofie, trenette or gnocchetti are good options in my opinion.
I always like to use Pecorino cheese in my pesto because it gives that extra kick in the flavour: try it out and let me know!

Authentic Italian Pesto - RECIPE
Prep Time: 20 mins
Cook Time: 0 mins
Complexity: Easy
Ingredients (2 people):
- 25gr basil leaves
- 10gr pinenuts
- 50gr extra-virgin olive oil
- 35gr Parmigiano cheese
- 20gr Pecorino cheese
- garlic
- 200gr pasta
Procedure:
1. Get yourself a pestle and mortar: we are going to do this the old way. Place the garlic and some salt in the mortar and start grinding;
2. Add the basil leaves. Keep grinding using a rotational movement;
3. Add the pinenuts and keep grinding;
4. Now it's time to add the Parmigiano and Pecorino cheese;
5. When you have a greenish paste, add the olive oil little by little;
6. Your pesto sauce is now ready;
7. Serve with pasta and ENJOY!
ITALIAN FOOD BOSS SPECIAL TIP: You should not wash the leaves under water but simply passing each leave with some wet towel!
