@11:30... Sounds like a Cummins. As long as you keep the boost under 8 psi, you should be able to "tune" with just a rising rate FPR.

Make sure the thermostat is actually seated in the little groove in the head. A lot of times as you go to button them up with the gasket, it will slip down slightly. Then you have the edge of the thermostat hang up, and not let the housing set flush.

Your thermostat is falling out of its little machined spot on the block, it’s very common on these engines. You get it lined up perfectly and when installing the cover it moves just a little and causes the cover to be slightly lifted and not sit flat.
A small amount of rtv on the thermostat to glue it in place helps.

The waist gate dump is a good way to lite dried grass under your Jeep on fire. As an avid off roader I would suggest staying away from fields when engine is running or any dried up areas in the wild. flames come out of the dump it could be catastrophic wildfire time.
