Pickled Cheese Recipe

📜 Ingredients for three servings:
- 360g (13 oz) soft, surface-ripened cow's milk cheese (we use Czech Hermelín)
- 2 big white onions
- 2 big red onions
- 1 garlic bulb- 250ml (8.4 fl oz) vegetable oi
l- 3 pepperoni
- 1 handful parsley
- 3 bay leaves
- 6 black pepper corns
- 2 tsp paprika
- 4 allspice corns
- 1 tsp salt

Cut the onions and the garlic as you like (to slices or wedges). Season with salt.

In a small pot, preheat 250ml (8.4 fl oz) vegetable oil to 120°C/250°F. Add the vegetables and fry for 5 minutes until they change color. Let cool to room temperature.

📝Note that this step is optional (I like the taste a lot more, yet you can put the vegetables straight away into a jar without frying).

Mince the parsley. Cut the cheese into 6 wedges.

Put everything into a 1l (2.2 lb) jar and tamp it to remove air pockets.Add some more oil up to the top of the jar.

Close the jar and refrigerate for at least one week.
Serve with a few slices of bread. Eat it all within 4 weeks.

My Compliments, Do & Do, for doing what most other youtubers preparing this dish habitually fail to do: frying onions and garlic for a few minutes before adding them to the mix; adding vinegar to ensure a certain degree of durability which the cold of the fridge alone cannot provide.
