The first graph is still true. It's just a front view of it. It doesn't show every angle at the same time but it doesn't mean it's incorrect

Fun fact: you cannot feel speed, only acceleration. The only way you'd notice those speeds is if we came to a very sudden stop, in which case anything not part of the earth would continue on (due to inertia) at those ridiculous speeds.

The best way I picture this in my head is of one of those old coin games back in the day that looked like a huge funnel or cone. You were supposed to drop a coin or spare change in and the coins would roll down in a spiral or whirlpool motion all at different times, down until they reached the hole in the center where are they drop into a bucket or something. In this case, I would use a quarter as the sun and the planets as smaller coins. The Suns mass is heavy and is being pulled to the bottom of the cone only using gravity... down to a single point. Now whether that's single point is a black hole...IDK.

I've always wanted to know and I haven't seen this questioned or randomly stated.. ..do all the planets rotate around the sun in the same flat plane or do they orbit around the sun in different planes like a gyroscope? If they orbit the sun in the same plane, when satellites are sent out to observe, are they sent out along this plane towards other planets? What are in the other directions?

Exactly! Just a little bit more like a cone shape and you will be exactly right. With the sun at the top of the cone because the sun pulls all the other planets. The planets are like huge comets always trying to fall in to it, but never do because of how fast the sun is moving.
