I have been cooking rib tips for years and have always found cutting the tips down to size before smoking have always produce a better product. now looking thru all the other you tube videos, everyone else cook the whole rib tip without separating between the bones - ur video illustrates the benefits of cutting the tips between the bones to get better seasoning and smoke. Well done dude.

Tip for UK pitmasters: go to the butcher counter in Tesco and ask for a full rack of belly ribs, they will fetch it from the back. You get exactly what Tom is cooking here

As we always do in STL. The rib tips are always on the menu along with the ribs. They are often sold separately to supplement those taken from the ribs!

I used to live in North Carolina & Texas and you just cannot find any BBQ place that sells tips. I also live in the DC area now and some people don't even know what tips are and you just cannot find them here and I just don't know why it's so hard to find outside certain areas because to me I think tips are the best part of ribs and is one of the things I mess most about not living in Chicago anymore. I'm going to have to see about making some next weekend.

Yes!! Use all the scraps!!
I usually cut down along the cartilage to remove them and open that rib tip area to where it’s almost like a pork “skirt steak”

Man sure looks good I used country ribs haha and I trim the st Louis ribs and left the stuff I trimed whole I never thought of that cutting into squares for rib tips like that but definitely going to do that from now thanks for the video and what we're you using to spritz the ribs what was your mixture

I sure needed that video in Smokin like 15 slab’s on the Fourth of July weekend and I can save the rib tips for something else, any tips lol on storing them for a month or two should I pre season them what you think Chef Tom ??

You can use rib tips for Compton cut spare ribs. Usually I cut about 1 inch section. Cutting past the cartilage is St. Louis. Compton takes half inch to 1 inch of rib tips and smoke them over almond 2 hours 10 minutes even.
