How to Make Pancit: Savory Filipino Stir Fry | ATE (ah-teh)

Known as Pancit in the Philippines, these stir fry noodles are a popular dish to bring to parties, share with friends and cook at home! As a versatile dish, Isabel confirms that everyone in her family has their own variation - all still very delicious. This recipe belongs to Isabel’s Ate (big sister) and has honored her by sharing a wonderful Pancit masterpiece.

INGREDIENTS:

Noodle Breakdown One Package Each
○ Rice Noodle (Vermicelli Thin)
○ Canton or Flour or Egg Noodle
○ Glass Noodle or Mung Bean Noodle or Bean Thread Noodle

Pancit Recipe
■ 1 lb skinless chicken breast/thighs boiled /shredded (4 cups of broth from cooking reserved)
■ 1 small onion chopped
■ 5-6 cloves of garlic chopped
■ ¼ cup julienned carrots
■ ¼ cup sliced celery
■ ¼ cup green beans sliced
■ ¼ cup cabbage sliced
■ 1 package of thin rice noodles
■ 1 package of canton noodles
■ 3-4 tablespoons soy sauce
■ 1 tablespoon of oyster sauce
■ Salt and pepper
■ Achiote/achuete optional
■ Sliced lemon to taste

DIRECTIONS:

1) In a large pot, cover chicken and simmer with salted water until cooked. Remove and shred when cooled. Save broth for later. Soak noodles in hot water.
2) In wok, add oil, garlic and onion and cook for 2 minutes. Add the cooked chicken and season with salt and pepper.
3) Stir in the veggies and cook for another 3-4 minutes or until a little tender. Add a bit of broth to soften.
4) Add all the ingredients for the pancit sauce and bring to a boil.
5) Add rice noodles and stir until all the noodles are coated with the sauce. Keep on stirring and cooking until the noodles are tender (3-4 minutes) + canton noodles until cooked.
6) Add more stock (or water) if the dish is dry before the noodles are tender.
7) Season with salt and pepper and more soy sauce if necessary. Serve with lemon wedges.
