24k Gold Dry Aged Ribeye

Happy new year everyone! Over the years we’ve done tons of dry aging experiments. A common theme is that adding flavors and sauces on the exterior (before dry aging) leads to extremely mild changes, so injecting beforehand was inevitable.

My big concern was that doing so would create pockets of air on the inside and lead to mold growth, but fortunately this didn’t happen at all. The @fyrstarter hot sauce distributed evenly and the combination was surprisingly good (if you like Buffalo wings).

You’ll also notice I didn’t remove the pellicle on this one. For one, I just didn’t have the heart to cut off and throw away gold… but also, the gold leaf seemed to protect the meat and there was almost no pellicle to remove even after 30 days. There are so many more cost effective ways to prevent a pellicle from forming (like adding beef tallow), but when using gold sauce on NYE, it had to happen.

Personally, I’m vegan but I 100% do not support people like the vegan teacher and I respect all others I just came to say your videos are so entertaining and satisfying to all viewers so ignore the haters (I’m vegan bc I don’t really like meat too much and my mom/mum dislikes the thought of animals dying for our satisfaction, yes I agree but we have to survive and we will eat what we get, steak is very nice so ppl eat it and I used too) thank you so much for making these amazing videos man!

For ones saying dry-aging is wasting time and rotting a steak: Dry aging helps tenderize a steak, and deepen its original flavor, along with whatever you put on it sinking in. You can do that with chicken overnight in your fridge with salt under the skin to crisp it up.

For people disgusted by gold leaf: It tastes like absolutely nothing, literally could search it up for .2 seconds and find that out alone

For people saying the hot sauce made it nasty: Either you're very sensitive to spicy things and can't handle it to enjoy the flavor. Or you just hate hot sauce in general. Or you really don't know how flavoring works. It doesn't sink in that much in dry aging even when you inject it, especially because it gets older
