If you leave a 1/4 inch of the fat cap, u don’t have to mop or spray it. U pick up so much more of that beautiful Smokey flavor too. When you wrap the meat, that fat will render down into it making it fall right apart. There’s many ways to skin a cat, but I’m picky with my briskets

What specific model is this? I’m looking at one like this second hand and wanna look up more info about it before I commit.

Only thing I do differently is keep the fat. I would recommend not trimming fat
