Meet chef Paul Lau of two-star Michelin restaurant Tin Lung Heen at The Ritz-Carlton, Hong Kong, who moved to Hong Kong when he was 14. When he first started out as a kitchen helper, Lau observed the chefs as they worked, and practiced cooking in secret after everyone left for the night. Today, he leads and guides other cooks in preparing traditional Cantonese cuisine to perfection using fine ingredients sourced from across the world.
This is the first episode of Fueling the Culinary Fire, a six-part series about the chefs behind some of Hong Kong and Macau’s award-winning restaurants.

His motivations seem more genuine than others at least. I am this kind of person, I like these kinds of food, and I don't want to be found fault with where I can prevent it.

Honestly would prefer the HK street food places 👍🏼 Same here in London, prefer Camden town street food.
x3 cheaper, way more filling, Some times new ingredients flavours are used to make new taste for the dish.
But I'm more biased to street food in general lol
