In this video we make our Opa's smoked venison sausage. This recipe has been handed down for over 150 years. If you haven't had it you need to try some!

The fresh stuff is boiled for 10 minutes and eaten with sauerkraut....the dried is eaten like jerky or "Slim Jims".

Lol this reminds me of my dad and making making sausage in the hv Harper/Fredericksburg area looks like same recipe and also would do course grid then change plates for second grids takes all weekend

HAHA, love your temporary smoker. Nice touch with the tool box too. I find that grinding the meat first, mixing the seasoning with a little water and then mixing with the meat works very well. I like the plastic boat, my buddy has a Logic.

How long do you dry it if doing dried sausage any tips that might help as far as environment it needs to be hung in?

where did you buy the wood for your 15 year old smoker, cause the wood still looks brand new? and what about the temp. on that sausage.
