Wow this show was great, their daughter Nicole is 2 years older than me and I had a crush on her at the time.

Joey reminds me of Riker from Star Trek.

I've been watching this show on Tubi since I barely remembered watching it as a kid. I had seen it to where I recognized Stacey Keenan when "Step By Step" started, but I couldn't remember a single episode. Just knew it was Paul Reiser from "Mad About You" as one of the dads, knew what the other dad looked like, knew her, the theme song, and I could remember the weird loft apartment. The show isn't bad. It's also referenced in an early episode (maybe the pilot) of "Full House."
They actually did have a paternity test done in the first couple of episodes, but the results were inconclusive as to who was the father.
What you do with a paternity test is test markers of the child's DNA vs. the mother's vs. prospective father or fathers. It can be inconclusive if it is in the range of above zero to less than 99% match.
How this happens is typically the child has had a DNA mutation that won't show up in the mother or father's DNA. So, you can't 100% guarantee that the child is fathered by the prospective father. It's rare to see that, but it does happen.
Or the real father wasn't either of them.

Honestly though, I think her mother was really weird to have her child raised by two men that she obviously cheated on one or the other and broke up their friendship. That's a big gamble to take. She also assumed neither were married with their own families? It's very strange as a concept. Nowadays, it would be easy. You would have one father who had come out of the closet by the time he's awarded custody, so she would have two dads, which isn't even much of a concept since gay couples have kids now, so it wouldn't even be interesting enough to put on TV.

I found concept very “odd”, even by sitcom standards. Though not knowing your baby daddy is the subject of many media. It always read as “gay” without being “gay” cause the 80s. Two men living together, bickering and raising a child? I was surprised there wasn’t so much jokes at that setup’s expense. Still enjoyed the show but I imagine if it was rebooted there would be A LOT of changes
