I'm not a pilot, but this looks as safe as biking down the freeway and grabbing your front brake lever.

This is why its important to have the proper gear. Crews that fly over water regularly, for example to oil rigs, wear special "Cold Water Immersion" gear, special water proof suits that float and insulate you. These are especially important in north Atlantic and arctic.

You'd be surprised how long you can survive in cold temperatures. There's that saying, "you ain't dead til you're warm and dead"
