Smash Burger
Ingredients:
1 Lb 80/20 Ground Beef
1 Sweet Onion
1 Tomato
1 Tbsp Pickle (minced)
1 Tbsp Ketchup
1 Tbsp Mayonnaise
1 Tbsp Dijon Mustard
1/2 Tsp Lime Juice
Lettuce
Pickles
American Cheese Slices
Sesame Seed Hamburger Buns
Olive Oil
Salt and Pepper
Instructions:
*In a large pan on medium heat, add 2-3 Tbsp of olive oil, onion (sliced thin), salt and pepper to taste. Caramelize onions slowly and set aside.
*In a bowl combine minced pickle, ketchup, dijon mustard, mayonnaise, lime juice, salt and pepper to taste. Mix and set aside.
*Slice tomato into 1/4 inch rounds. Season with salt and pepper then finely shred lettuce and set aside.
*Next weigh burgers into 2-3 oz balls. In a cast iron skillet or flat top grill on medium high heat, add a little oil and smash burgers until they are 1/4 thick. Season with salt, pepper, and optionally garlic powder. After about 1 minute you should have a good sear and Maillard reaction on the burgers. Flip, season the other side, and add a slice of cheese to each burger. Once the cheese is melted the burger is done. (Total cook time is about 2 minutes)
*In a large pan on medium heat, add a little butter and your buns. Keep the hamburger buns moving so they toast evenly.
*Not it’s time to Build: Start with some sauce on the bottom bun, lettuce, tomato, 4 smash burgers stacked on top of each other, pickles, caramelized onions, add sauce to the top bun, crown that bad boy and….
