Californian sushi is definitely different from Japanese sushi. In Scandinavia, where I live, cheaper versions of sushi are often made using typical Californian ingredients like avocado, while high-end sushi restaurants instead focus on preparing the incredible seafood we enjoy over here using Japanese techniques. I wouldn't mind trying more of California style 'experimental' sushi, but I suspect I'd grow tired of such experiences pretty soon. Seafood of superior quality doesn't really need a lot of sauces, spices, glazing etcetera. Innovations and experiments are of course of value, but only to a certain extent. Compare to a perfect steak. The only thing you really need to enjoy it to the fullest is a well aged bottle of an excellent red wine.

It's a "sushi" tour but many of these items make them KOREAN and not Japanese. I'm sure they are great but they present alot of which is not "sushi." I am Japanese and this may be good, but it's not sushi but a KOREAN dish.
