The west didn’t just have hot biomes, you could go up into the cold mountains of Colorado or Wyoming, with alpine forests and snow 3/4 of the year

Needs trains. There's an immersive engineering trains addon, but it looks pretty complicated. There are other train mods, but they're for 1.12.2. Admittedly they have modern trains, but you can stick with the steam engines to fit this aesthetic

This is a great idea especially for multiplayer where people can build their own saloons and own gangs. A snow addition or some type of seasonal thing would make it so much better as well.
