Sponge Cake Recipe in gr and cups:

- 3 Egg Yolks
- 4 Egg Whites
- 120 gr Sugar ( 1/2 cup + 2 tbsp)
- 6 tbsp Milk
- 3 tbsp Oil ( or butter )
- 120 gr All Purpose Flour ( 3/4 cup + 2 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- Zest of half a lemon
- Pinch of Salt

The consistency of your batter may change depending which flour you decide to use. I recommend using either all purpose or cake flour.
Enough for 2 Cake Layers. NOTE: Please check the video to see what to pair this cake with. But this cake is also delicious on it's own! :)

Vanilla Butter Cake in gr and cups:

- 110 gr Softened Butter (1 stick)
- 40 gr Coconut Oil (3 Tbsp)
- 160 gr Sugar (3/4 cup )
- 1 1/2 tbsp Vanilla Extract( if you are using vanilla essence, made from artificial flavouring add only 1 teaspoon)
- 3 Eggs
- 270 gr All Purpose Flour (1 3/4 cups Flour)
- 3 tsp Baking Powder
- 120 gr unsweetened full fat yogurt (1/2 cup)
- 60 gr Milk (1/4 cup)
- 1/2 tsp Salt

Enough for 2 cake layers ( or 3 thin layers)

I know it's been 2 years since you posted this, but this is now my go to recipe for cakes. The first time I did it, it turned out FANTASTIC, everybody loved it. The second time tho, I didn't mixed the egg whites long enough, but I mixed the whole batter at the end too much and it was a disaster haha. I absolutely love you and your recipes❤

Science and baking are my two great passions, and you brought them together in such a beautiful, simple and fun way... Plus, you demonstrated everything "experimentally" like a true scientist! 👏 I would just like to add another important element: refrigeration - sponge cakes are better for recipes which require refrigeration such as cakes that contain fresh fruit, fresh whipped cream etc. which is really important because such deserts are generally consumed in summer time. On the other hand, butter cakes do not handle refrigeration really well because the fat in them solidifies. I hope this is helpful to the people that still might have some cake conundrums, although this video is such an amazing tutorial. Oops, a masterclass! 😉 Anyways, I love your work Emma, keep it up! 😍

This video is excellent, thank you so much! I have a question, though: you mentioned that it's important not to overmix cakes that don't have high fat content because it's very easy for gluten to develop. What would be the consequences of too much gluten developing in a cake? Would the texture become worse, or is it more of a nutritional problem? Thank you!

This is a video anyone who wants to bake a cake should watch before baking. Excellent info. Sometimes, people in online recipe blogs and recipe videos don't know the difference between these cakes, and will show a video where they claim to bake a sponge cake(esp if it is eggless) but are actually cooking a butter cake.

I consider myself just an _amateur_ (let say: less than an hobbyist) on baking: just because I like to cook and "get my hands dirty" doesn't mean I'm a chef, neither a baker, nor anything more than someone capable of preparing a meal without causing the kitchen to explode, probably 😅
So I consider always welcome those kind of videos which not only present a recipe, but also give some interesting "behind the scenes" of some preparations or how some specific recipe works.
Furthermore, I didn't tried many times to prepare spongecakes, 'cause I'm always worried it might fall apart, but now - thanks to your channel and some of your videos - I've learn a couple of tricks I've already used and always resulted in the perfect amount of ingredients and procedures to achieve just the right cake... so THANK YOU VERY MUCH, Emma! 💖

I don’t know how I came across Ur channel but I’m glad I did. Since I was little, I have always wanted to know the science behind everything and I have always loved baking and cooking. Thank you so much. Your explanations are so simple yet thorough. Keep up the awesome work.
I’d appreciate if you could explain the science behind replacing butter with ghee (clarified butter) in different recipes as being a desi, my family usually demands it.

This is one of my favourite videos of yours! It was really informative, and especially useful at towards the end, when you spoke about pairing different kinds of frosting with different kinds of cake. I also loved the part towards the end when you showed how the different kinds of cake hold up when you "oversoak" them! So interesting, I really didn't know butter cakes and foam/sponge cakes were so different.
