Homemade Habanero Hot Sauce

We grow our own hot peppers here on The Neals' Homestead. Habaneros are one of the favorites. This video is about a great recipe for some homemade sauce. I made some of my own modifications, but here's the basic recipe by Genius Kitchen:

Ingredients
Nutrition
1 onion, chopped
2 garlic cloves, chopped
1 cup carrot, chopped
2 cups water
10 habanero peppers, seeded and fine chopped (more or less based on the heat level you desire.)
3 tablespoons lime juice, can also use orange juice
3 tablespoons white vinegar
1 teaspoon salt
optional papayas, prickly pear fruit or mango

Directions
Sauté garlic in coated sauce pan.
Once the garlic starts to give off it's aroma, add the onion, carrots, and water. Bring to boil, reduce heat and simmer until the carrots are soft.
Remove from heat .
Add habaneros, optional fruits, lime juice and salt to the carrot mixture.
Place in a blender and puree until it reaches a smooth consistency.
Pour into sterilized bottles or jars and seal. Keep refrigerated.

A trick I learned from Master Chef Rick Bayless is to rinse the chopped onion under cold running water for a few seconds. It mellows the taste and removes the sulfur (that was created when you cut into the onion. Sulfur mixes with the moisture on the surface of your eyes to form a mild sulfuric acid, which is what causes the burning.

I have several pounds of habaneros this year. I really appreciate the recipe and process in the show notes.

Sauce looks great and also a very nice color. Could you do more of these videos with more variety of peppers ? As i am growing all varieties of peppers from the medusa and black pearl chilies. That will be appreciated 👍😁

Looks amazing. I'm going to try this recipe but roasting the pepppers, onions, garlic on the bbq in tin foil first. Hope it turns out.

Hell yeah lady, that looks amazing! I'm about to embark on my own Habanero growing journey next growing season. Been gardening for almost a decade now, but haven't done any spicy peppers, and I'm very much looking forward to it. If we compare your Habanero sauce to say, a Tabasco sauce, how much hotter are we talking? Thanks for the vid.

I see that you did not give that to Old Guy when he was holding his machete! I have to wear gloves ALL OF THE TIME when I work with any sort of hot peppers. I mostly dry and grind them up to make pepper flakes for cooking.
