Angelo's Mom Makes Spanakorizo and Lemon Chicken Breast

The recipe for Spanakorizo (though you can change the portions pretty much however you like):
One large chopped onion
Two cups rice
3 pounds spinach (loose, not frozen)
One medium lemon
Olive Oil
Black Pepper
Dill
Salt
Put olive oil and the chopped onion in a large pot and cook for five to ten minutes or until it yellows a little. Put in the spinach and put a lid on it, mixing the spinach every few minutes so that it cooks evenly. When the spinach has wilted and there's more room in the pot, put in the rice (my mom washes it, but I don't), and put in a cup of water. Stir it and season it with black pepper, an entire small canister of dill, about a tablespoon of salt, stir it again, and put the lid on it. Add a little more water as necessary, and in about 10-15 minutes it will be done.
The lemon chicken breast is pretty simple. Put lemon breasts in a pan with olive oil and pour fresh squeezed lemon juice on it. My mom put basil, garlic powder, and oregano on it, and cooked it for about an hour, though I don't know why it takes her so long. She probably had the heat lower than the people who post recipes online saying you can cook it in 15-30 minutes.
