Stepper motors are good solutions for applications with low speed, low acceleration, and low accuracy requirements. Stepper motors also tend to be compact and inexpensive. Servo motors are a better choice for systems requiring high speed, high acceleration, and high accuracy. Servo motors are commonly used in industrial applications including robotics, manufacturing, pharmaceuticals, food services, CNC machinery, automated manufacturing, and more.

The system accuracy comes down to the encoder ppr. And if both motors have closed loop systems with the same encoder feedback the accuracy will be almost identical.
A servo without an encoder is nothing, a stepper without an encoder is still pretty accurate.
