Mexican Ole (We quadrupled this!)

1/2 lb chicken breasts, chopped
1 can pinto beans
1 cup salsa
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons garlic powder
2 cups tortilla chips
1 cup sour cream
1/2 cup green onions
1 cup chopped tomatoes
4 ounces shredded cheddar cheese

Cook chopped chicken, stir in beans, salsa, chili powder, cumin, and garlic. Heat to simmer, stirring. Put tortilla chips in 2-quart casserole dish. Top with chicken mixture, then sour cream, then cheese, green onions, and tomatoes. Bake uncovered for 20-30 minutes in 350 degree oven. Serve with lettuce garnish, if you wish.

Mexi Corn Dip (We tripled this!)

* 2 cans (11 oz. Cans) Mexicorn, Drained
* 1 can (4 oz. Can) chopped Green Chilies
* 1 bell pepper, chopped
* 3 green onions, chopped
* 2 jalapenos, chopped
* 8 oz. bag of shredded cheddar cheese
* 1 cup sour cream
* 1 cup mayonnaise

Combine all ingredients. Chill before serving. Serve either with Fritos or Tortilla chips. Enjoy!

For the Kenyan dish recipe:

Ingredients:
- 2lb of cubed beef
- One large white onion
- bunch of collard greens or bag
- two bags of frozen spinach or fresh
- 6 large tomatoes
- 2/3 tbsp of Worcestershire sauce
- 2 tbsp of peanut butter (optional)
- 2 tbsp of coconut oil
- One of two cloves of garlic (optional)
- Grated ginger (optional)

Directions:

1. Cut meat if not already bought cubed to equal around 2lbs

2. Cut and wash collard greens if fresh (slice thinly so it cooks down)

3. Cut up tomatoes

4. Cut up one large onion

5. Heat a large stock pot to medium high heat with 2 tbsp of coconut oil

6. Throw in the onions and brown until softened (if you are adding garlic and ginger add it now to the onions to cook down)

7. When the onion is softened add the meat to brown

8. Once the meat is browned add in the tomatoes to soften

9. Add it in the collard greens and stir every once in awhile

10. Add in the spinach (let wilt if fresh)

11. Stir to combine once the greens are soft and wilted

12. Add in Worcestershire sauce (2 tbsp)

13. Taste for seasoning and add more if needed

14. Lastly add 2 tbsp of peanut butter

- Stir to combine and enjoy!

- Serve over rice or by itself.

YES, I know what language that was! Judah, come join us here in Japan. Lots of work to do! The churches are small but the people are wonderful. My husband and I have been here since 1981 and are getting ready to retire soon. We need young people with a passion for Japan.

"I'm not a pro at cooking and filming" Hey Solo, you're doing great, considering some of us can't even do one of those things good by itself lol. He is right though cooking at home does save a lot of money instead of constantly eating out. Having new recipes likes yours sure does help in mixing up dinners.

I am sure if you calculate your home cooked meals versus eating out, you probably save 80-90%. We ate at McDonald’s the other day and for two adults it was over $15. Last night we had two very nice store bought steaks and baked potatoes for about $20. I’d much rather spend the $$ on steak than fast food!

I love how you work together to make meals for the week. So smart!

My Brother in law went to grocery store to help out my sister who was making lunch at church. He came back with several bags of potato chips. My sister asked why he didn't get "party size" bags. He said he thought smaller size chips would go farther than big chips. He thought "party size" referred to size of chips and not size of bags!!!😆😆😆

Another great way to put up chicken is to slice it in 1” strips, raw pack it in canning jars, drop in a bullion cube and pressure can it. It makes its own broth so no liquid needed. You then have shelf stable chicken for a gazillion dishes. It’s my favorite and most versatile home canned item to have in my pantry.

After watching you make sukuma wiki many times over the years Solo, I finally gave it a go tonight, and it was a hit with everyone! So yummy, and such a great way to use up kale and spinach from the garden, and stew beef from the freezer. 😊

I am SO glad they Solo mentioned adding PEANUT BUTTER to the sukumo wiki !!! I’ve made it at least 3 times before and I added the peanut butter SUCH AN AMAZING IMPROVEMENT !!!
